No-Bake Sunflower Seed Protein Energy Bites

No-bake protein energy bites made with sunflower seed protein, almond butter, oats, and a touch of honey. Ready in 15 minutes (plus 30 minutes chilling time), no oven required, and meal-prep friendly for the whole week. Clean ingredients, genuinely satisfying, and small enough to eat before anyone notices.

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup Sprout Living Sunflower Seed Protein powder
  • 1/3 cup almond butter or sunflower butter to keep it nut-free
  • 1/4 cup honey or maple syrup
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp fine sea salt
  • 2 tbsp dark chocolate chips optional but recommended
  • 2 - 3 tbsp oat milk only if needed to bring the mixture together

Method
 

  1. Add the oats, sunflower protein powder, cinnamon, and salt to a large mixing bowl and stir to combine.
  2. Add the almond butter, honey, and vanilla extract. Mix well until everything starts to come together.
  3. Fold in the chocolate chips if using.
  4. Check the texture β€” the mixture should hold together when pressed. If it feels too dry or crumbly, add oat milk one tablespoon at a time until it binds.
  5. Roll the mixture into balls roughly the size of a large tablespoon β€” you should get around 12.
  6. Place on a plate or tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge and deploy as needed.

  • Nut-free option: Swap almond butter for sunflower butter β€” it pairs beautifully with the sunflower protein and keeps this fully nut-free.
  • Sweetness: ΒΌ cup of honey gives a mild sweetness. If you prefer less sugar, reduce to 3 tablespoons β€” the chocolate chips will carry some of the sweetness.
  • Texture fix: If your mixture is too wet to roll, add a tablespoon more oats. Too dry β€” add oat milk a little at a time.
  • Storage: Keeps in the fridge in an airtight container for up to 5 days. Freezes well for up to 2 months β€” just pull a few out the night before.
